1 c. shortening
1/2 c. sugar
1 t. grated lemon rind
1/4 t. salt
2 T. lemon juice
1/2 c. brown sugar
1 egg
2 1/2 c. flour
1/4 t. baking soda

Cream shortening, add sugar, lemon juice, and eggs. Add lemon rind. Sift flour, salt, and baking soda together. Place in balls 2" apart on an ungreased cookie sheet.
