1/2 c. shortening
1 c. sugar
3 eggs, separated
1 1/2 c. sifted flour
2 t. baking powder
1/2 t. soda
3/4 t. salt
1 c. graham crackers, finely rolled
1 c. mashed banana
1/3 c. buttermilk
1/2 c. chopped nuts
1 1/2 c. heavy cream, whipped
ripe banana slices
Cream shortening and 1/2 cup sugar. beat in egg yolks. Sift flour, baking powder, soda, and salt together. Combine with crumbs. Stir into creamed mixture alternately with mashed bananas and milk. beat egg whites until foamy. Beat in remaining sugar until whites are stiff and glossy. Fold into cake mixture along with chopped nuts. Pour into 8" round greased and lined cake pans. Bake at 350 degrees for 35-45 minutes or until tooth pick inserted in center comes out clean. Cool for 10 minutes and remove from pans. Cool thoroughly. Place layers together with whipped cream and banana slices. Garnish top with banana slices.
